Woodfordes Great Eastern Ale Pete August 18th 2011

dual personality

Brew as per instructions but use light spray malt to prime bottles. Drink at room temperature and this one reminds you of a nice summer pale ale similar to Blonde Witch (Moorhouse) However chill it to death and it will be much more akin to a slightly malty lager and ideal to have around for those BBQ’s and to serve to all your friends who think they don’t like real ale but you will have to teach them how to pour it!. One of my regular brews. Needs 6 or so weeks in the bottle to display its true colours.

Best from Festa thus far

I've done this one several times and can't get enough. Fermented between 62-68, primary for 3 weeks and then straight to bottles for another 3 weeks. This has the deepest smoothest creamiest feel of any kit stout I've ever had. The flavors beat must commercial oatmeal stouts I've had, I make a batch of this stuff every other brew so I always have it on hand. Grab this kit you won't be dissapointed!!

Really nice Ale

Wow! What a great tasting ale, resembles Fullers ESB! Brewed with 500g of Muntons medium spray malt and 700g of High malt glucose. Brought up to 20L. Fermented at 21C for 8 days primary, then directly to bottle. Came out really clear even after a few days in the bottles. Amazing flavor, mild bitterness and clean dry finish. One of my best kit brews to date. The only thing I would add would be some aroma hops next time. That would make it a truly wonderful ale! Cheers!

Coopers APA with Cocoa Nibs & Amarillo Hops

I've brewed this kit 3 times and this would be my best batch so far. Coopers APA + Coopers Brew Enhancer No.2 + additional 250gm of LDME. Made up to 17Litres (instead of normal 23Litres). 15gm Amarillo Hop Bag steeped in 500mls boiling for 15mins added to fermenter along with 30gms of Cocoa Nibs. Fermented for 11 days at approx 20C. Now 4 weeks in bottle and starting to taste very nice. A lot more complex in taste than the standard APA recipe. Amarillo gives a nice citrus type flavour/aroma. I've made this with the Cascade hops, which is also very nice (grapefuit flavour/aroma). ABV = approx 6.7%. Could possibly add more Cocoa nibs to give the beer more of a chocolately edge.

Cooper's Sparkling Ale

Brewed using the instructions on the can/Cooper's website. I also added a hop tea of 12 gms of Summer Saaz pellets. This makes a very smooth easy drinking ale which improves with age. Can't really fault it and would definitely make this one again.

Good so far

I got this with a kit from Pak N Save. Made it with BE2, 500g of spray malt plus 50g hallertau pellets at start and further 50g added loose 1 week into fermentation. Was a bit concerned about all the residue from the 2nd addition of the pellets but these have settled out nicely. Have a had couple of samples 2 weeks after bottling and this is gonna be nice - great head retention and heaps of flavour which I think will just get better. Will dom this recipe again but perhaps slightly ease off on the hops. Could be too overpowering for some.

Good Hefeweizen Kit

I made this kit to the Hefeweizen recipe on the Coopers website. 1 can Coopers wheat beer, 1kg Coopers liquid wheat malt, make up to 23 litres and ferment using WB-06 yeast. The resulting beer is certainly a Weißbier, typical aroma. The flavour is a bit light, and mouthfeel is a little watery. The head is light and fluffy just like a weißbier should be. Overall a very nice beer, next time I would maybe lower the total volume by a litre or two to concentrate the flavours.

Amazing Pale Ale!

My buddy brewed this one, 1 week primary 2 weeks secondary 1 week bottled. Batch primed with 1 pound of dex. All I can say is Amazing! This Ale is one of the best I have ever had! So tasty. Very easy to drink. Not super hoppy, but still very nice and malty. I still have 2L of it left as a gift so I am happy as a clam! 5 Stars!

Coopers English Bitter

This review is for the Coopers International Series English Bitter. A good base but lackluster with nothing else added. On opening the can aroma hops were noticeable, but must have gassed off during fermentation. Medium to low mouthfeel. Not enough malt sweetness to carry the bitterness. If I brewed this again I would add 1.5kg of LDME, a handful (~150g) of steeped crystal, and a teabag of EKG or fuggles to prop up the aroma

Coopers Pilsner Doolz June 17th 2011

Coopers Pilsener

Made as per Coopers instructions using 500g LDM and 300g dextrose. Used the Coopers yeast, which is a lager yeast. I only made the volume up to about 20 litres. It fermented at around 15 degrees centigrade for 12 days then I racked it to another container for 3 days then added a hop tea made up of 21g of Saaz pellets steeped in boiled water for 10 minutes. I kegged it after 3 more days and tried it 3 days later. It is fantastic beer. The aroma and flavour from the Saaz is delicious. This will be my house beer unless I stumble across something better. 5 stars. Next time I will make the full 23 litres and try all malt.
Coopers Original Lager dan June 17th 2011

alright

brewed with 1 kg coopers brewing sugar for 10days. og 1042, fg 1010. pretty crisp refreshing beer. kinda bland. really needs some bittering hops and some Ldme. I'd do it again with some adjustments.
Coopers India Pale Ale (IPA) Derek June 15th 2011

Great beer

This is a great kit. My first home brew and turned out great. Used 500g spray malt and 300g dex. No hydrometer, no thermometer, no heater. Just guessed temp, mixed and left for 2 weeks primary in the kitchen about 18-20 degrees. Tasted good a week after bottling but after 2 months in the bottle tastes fantastic. Would like a bit more bitterness. Might experiment a bit with the next batch.
Coopers Irish Stout James June 4th 2011

Mmmm stout

The recipe was: 1.7kg Thomas Coopers Irish Stout, 1.5kg Coopers Light Liquid Malt Extract and 80g of roasted barley steeped, made up to 23 litres and fermented at 20C using the kit yeast. I bottled the brew and used very low priming rate (about a quarter of normal). The brew doesn't pour with much head (which is intended), so use a plastic syringe to inject some of the liquid back into the glass to get the Guinness like cascade and creamy head. This is an excellent kit, good mouthfeel, awesome aroma and a nice roasty taste, just like a real Irish stout. Certainly recommended.
Coopers Original Lager Doolz June 1st 2011

Good basic lager

1/2 and 1/2 1 kg + 200g Glucose (Corn Syrup) 17g Saaz steeped for 10 minutes in a cup of boiled water added after 4 days Fermented at 24 degrees Very good basic beer, just a nice touch of bitterness. A little cloudy to start with. I don't think I racked it for long enough. But this doesn't affect the taste. I kegged it for 24 hours and tried it. It tasted great. Better than the Coopers Pale Ale. Definitely worth doing again.
Muntons Wheat Beer Yannick Bastien June 1st 2011

needs a kick...

Did this kit by switching some of the dextrose with some wheat malt extract (about 500g + 500g). Temp. range 20-22 degrees). Used safale-04 yeast for the first time to make an american wheat beer style (the guy at the store recommended it). Result: tasteless. It's a wheat beer alright but you definetly have to kick it up to get some distinct flavors. ps. Read that the safale-04 was the best for floculation... but for the taste?? Not impressed. It was the first time that my brew were fermenting that crazy (had to let CO2 out twice a day (am using the plastic over the pail) I guess more brews will tell. But so far, S-04 = crazy fermenting but not distinct flavors.
