Perry CiderThis is a Perry/Cider hybrid...Black Rock Cider + 2l 100% Fresh Pear Juice + 1kg Sugar + water topped up to 23l mark. Fermented at 21 ~27... 2 weeks after bottling it tasted like the fluid that collects in the bottom of a rubbish bag but let it sit for 3months and it's a beaut medium-dry cider. Bloody strong though ! The key is to let this stuff rest. One avenue of improvement would be Champagne yeast and dry enzyme... |

Hertiage LagerCoopers Heritage Lager + Brewer's Choice Ultra Brew (LDM+Dex+Corn Syrup Solid). Kit yeast worked nicely. Fermented at 13C for 3 weeks. Tasted at 1month. Very clean and smooth due to the low fermentation temp. Not sure if I'd muck around with this one. It will please the general public and I find it a nice change from full-bodied ales... |

MaltyBrewed this one with 1 x can of Morgan's Lager Pale Extract + 500g LDM + 250g Dex. Fermented at 18C~21C for 10 days. Very malty with clean finish. The maltiness stands out and gives the impression of heaviness. For me 2 glasses of this in one sitting is enough flavor wise. I would add POR hops next time to "cut" through some of the maltiness. Still excellent beer ! |
